Chef Claude Tayag Wows with Philippine Flavors in Hamburg

October 22, 2019

Renowned Filipino Chef, food writer, and visual artist Claude Tayag lent his culinary skills as Guest Chef of Underdocks Restaurant, one of the new, trendy eateries in the bustling German city of Hamburg, at a special Philippine Food Weekend from 18-20 October 2019.

Featuring an all-seafood and vegetable take on classic Philippine dishes, Chef Tayag introduced the restaurant’s international clientele to the different flavors of the Philippine palate from sour, salty, bitter to sweet.

Re-working classic recipes, Chef Tayag wowed diners with his unique take on Seafood Kare-Kare, Deconstructed Fresh Lumpia, Kinilaw, Soft Shell Crab with Aligue Sauce, Squid Adobo with Philippine upland rice, and his signature buko-pandan dessert, Claude’s Dream.

Prior to the sold-out lunch and dinner services throughout the weekend, Chef Tayag, with Philippine Ambassador to Germany Theresa Dizon-De Vega and Philippine Tourism Representative Meggie Valdes hosted a Tasting Night for members of the German Media.

The event was organized by the Philippine Tourism Office in Frankfurt and supported by the Philippine Embassy in Berlin as part of the Philippine Government’s Culinary Tourism campaign. END
